HOW TO MAKE CRISPY FRENCH FRIES:
1.- The first thing to take into account, as I said, is the cut. The thickness of it does matter a lot.
Peel the potato and cut it into sticks. The size of it should be around 1 centimeter thick. This is the standard and most common size for a French fry. By doing that, you are making sure that they will have a crunchy shell and a soft and tasty interior.
2. – The next step is to wash the potatoes. Water will eliminate the excess starch that they contain and ensure that they do not stick together and that they will be more crunchy. So put them on a drainer and wash them with plenty of water.
3.- Let’s drain well the excess water and proceed to fry the potatoes. Do it in two phases. First, put abundant olive oil in a frying pan or fryer over medium heat; enough to completely cover the potatoes, and put them inside. Let them cook for about 10 minutes, depending on the hardness of the potato. When it is soft, remove it from the oil and leave it for at least 30 minutes to cool. This rest time is crucial, so if you have time, don’t skip it.
4.- After this time, heat the oil to the maximum and put the potatoes in it. When they are golden and to our liking, take them out. About two minutes. Put them on absorbent paper and add the salt.
– It is important not to add the salt until the end because the salt softens the potatoes during cooking.
